Adobo is one of the most popular Filipino Dishes. It’s easy to cook, and it’s delicious! I haven’t met a person yet who doesn’t like it. Today, I’m taking an already easy recipe and making it even more easy by cooking it in the Instant Pot. Stay tuned until the end because I share a super yummy way to repurpose any leftovers you might have.

Instant Pot Chicken Adobo

Ingredients

  • Vegetable Oil
  • 1-2 lbs. Chicken (I use a mixture of breast and thighs. You can also do wings and drumsticks)
  • 3 cloves of garlic, peeled and crushed
  • 2-3 bay leaf
  • 1/2 cup soy sauce
  • 5 TBSP – 1/2 cup vinegar (I like mine more tangy so I do an even 1:1 ratio of soy sauce and vinegar)
  • 1/2 tsp black pepper (it calls for peppercorn, but I never have peppercorn)

*Some people add in things like sugar and water to help make it less tangy. This is something you can do, but I just add less vinegar if I want it less tangy.

How to Cook

  1. Turn Instant Pot on and choose sautee function.
  2. Pour oil to cover bottom of pan and heat.
  3. Add garlic and cook until fragrant (about 30 seconds)
  4. Add chicken and brown on all sides.
  5. Turn off sautee function. Add vinegar, soy sauce, pepper, and bay leaf.
  6. Stir to combine
  7. Press the “poultry” button and cook for 15-20 minutes (the time I choose depends on whether I’m starting out with frozen or defrosted chicken. Use a longer cook time if you’re starting out with frozen chicken.)
  8. Slow release when done.
  9. Remove bay leaf and serve over rice.

Bonus recipe: Adobo Fried Rice
