Fall is here and I’m so excited to share the best zucchini recipes (according to the humans in my house) with you! Last week I made some zucchini bread and my daughter said “Mom, zucchini by itself is so gross, but zucchini in anything else is so good!” Obviously, we still need to develop some of their tastes for the vegetable zucchini, but I’m hoping that with a regular rotation of these recipes, we will be able to do that.

1. Sauteed Zucchini

•1/4 TBSP olive oil
• 1 TBSP butter
•1.5 zucchini cut into half-moons
•minced garlic (I used 2 cloves but I think next time I’ll do more)
•Italian seasoning
•salt and pepper to taste
•pinch of red chili flakes
•splash of lemon juice

Melt butter in olive oil. Add in garlic and cook until fragrant. Add in zucchini and spices. Cook for about 5-7 minutes until it reaches your desired crunch (I like mine starting to get soft but still with a little crunch in there). Add a splash of lemon juice and stir.

2. Spaghetti with Veggies

I’m always looking for ways to add vegetables into our meals and adding them spaghetti is my favorite way to do it! Chop or shred some zucchini and add it to your spaghetti and it’s just a perfect match.

3. Zucchini Bread

I love zucchini in bread and these are two of my favorite recipes.

  2. Double chocolate Zucchini bread from Valeries Kitchen is one that we have loved for years as well.

4. Roasted Vegetable Dinner

Roasted Vegetables is our favorite way to eat our vegetables. I love to add zucchini in this recipe and with the melted parmesan cheese, it’s just too yummy to pass up.
