One of my goals this year was to eat more vegetables. It’s a goal that I have to keep recommitting to, but over this past year, I have learned a few tricks to help me eat more vegetables. I’m sharing 5 of the easiest ways to get more veggies in. Hint: These are all kid-approved methods. Enjoy!
Drink your vegetables!

I think the first trick many of us learn when wanting to eat more vegetables is to put them in a smoothie. But in case you didn’t know, now you know! A smoothie is a great way to get those greens in. My favorite vegetables to dump into my smoothies without them taking away from the fruits I usually put in are spinach and kale. What are your favorite veggies to include in your smoothies?
Eat more vegetables with your favorite dip
Most moms know that a great way to get a kid to eat something they don’t want to is by giving them a yummy dip to dip their food in. I don’t know what it is about the dip that helps, but did you know that the dip can be helpful for adults too? When I first committed to eating more vegetables, it was hard. Why? Because my tastebuds were not used to them. So I employed the dip while I still love a good veggie dip, I can also eat vegetables without them. Some people might say that most dips aren’t very healthy. My two cents? I’d rather eat vegetables with a less than healthy dip than not eat any at all.
The Airfryer is your new best friend.
Every once in a while the inventors of the world create something amazing. And that’s exactly what they did with the air fryer. I have tried and fallen in love with new vegetables because of the air fryer. A simple search on Pinterest yields lots of amazing air-fried vegetables. Some of my favorites include:
- Kale (chips)
- Brussel sprouts (you guys, don’t sleep on brussel sprouts!)
- Broccoli
- Sweet potatoes
Try it out. You won’t be disappointed. P.S. Out of the 3 air-fryers we’ve owned, this one is our favorite.
Salad kits and pre-cut vegetables

Confession: one of the reasons I always had a hard time eating more vegetables is because of all the effort it took to cut and slice them up. It’s true. Then I discovered salad kits and pre-cut vegetables. Part of me was ashamed with the thought of what others would think of me paying more for kits and precut veggies when I could save money and cut them myself. But guess what? I wasn’t! And my health was suffering. I decided that my health is much more important to me than being perceived as lazy. So here I am now, a big supporter of salad kits and pre-cut vegetables.
Sheet pan vegetables
Once upon a time, I came across an amazing recipe for sheet pan vegetables with sausages. I fell in love. It was easy to make (seriously! Easy enough for my kids to make it.), made a lot, and was delicious. Aside from my laziness for cutting vegetables, another contributing factor for my not eating many vegetables was a lack of planning. With sheet pan vegetables, I am able to make a ton in one sitting and then eat it throughout the week. Sure I have to cut a ton of vegetables, but if I do it all in one sitting instead of each day of the week, it’s not so bad.
