This is my favorite time of year as far as my weekly menu plan goes. We cook a ton and then live off it for the next few days. Honestly, I don’t know why I don’t do a weekly feast more often.

On the menu this week are the following:

Pho and Lumpia

The only good thing about winter is how many times I am allowed to put soup on my menu. My go-to recipe is by no means authentic, but I (and more importantly my kids) love it all the same. It also calls for easier to access ingredients which is a plus if you live in a place where there aren’t any Asian stores.

Roasted Sausage and Vegetables

This is a favorite recipe because it’s easy to make and has lots of veggies. When I say it’s so easy to make, I mean you chop the veggies and the sausage and then you put it all on one pan (with spices) to bake. There are never any leftovers when we make this recipe. Thanksgiving Feast

In the spirit of giving thanks, I’m going to go ahead and proclaim my gratitude for a holiday centered around eating. Below are some of my favorite sides to have with the turkey.

  • Cheesy Potato Casserole – This is also known as “Funeral Potatoes”. Don’t ask me why. I love this recipe because instead of boiling, peeling, and mashing potatoes, I dump the ingredients, mix them and bake!
  • Candied Sweet potato with marshmallows – This was something we always had growing up and I have grown to love it even more with time.
  • Pumpkin Crunch – This yummy treat is an alternative to Pumpkin pie that we started eating last year. So delicious.
